Shio-Koji Ginger & Garlic Tsukune with Okinawan Dragon Fruit Sauce

Juicy ground chicken meatballs seasoned with homemade Shio-Koji (fermented salty rice seasoning) for tender, umami-rich flavor. Mixed with fresh ginger and garlic, pan-grilled crispy outside, tender inside, and served with vibrant Okinawan dragon fruit sauce.

I kindly ask everyone to arrive by 10:40 AM at the latest, as we’ll begin shortly after and aim to finish around 2:00 PM.

  • Please note: This retreat is not suitable for individuals with rice or soybean allergies. It is also not vegetarian, as the meatball contains chicken.

    I can often accommodate participants with gluten intolerance or celiac disease, and may be able to adjust for other allergies depending on the ingredients used in that class. However, each retreat’s menu is different, so please read the retreat ingredient list carefully before signing up.

    Important: We use a shared kitchen space. While I do my best to keep ingredients separate and provide individual utensils, participants with allergies must attend at their own risk. Okinawa Healing Kitchen cannot be held responsible for any allergic reactions.

      Select a date from the calendar below and indicate how many people will be attending.

    2. Wait for confirmation:
      Once I secure the kitchen for your requested date, you’ll receive a confirmation email from okinawahealingkitchen@gmail.com.

    3. Complete your payment:
      That email will include a payment link. Please complete your payment within 48 hours to secure your spot. (Don’t forget to check your spam folder!)

    4. Final details:
      After your payment is confirmed, I’ll send parking information and the digital recipe packet 3 days before the class.

    • Solo — $230 (Early Bird: $220)
    • Group of 2 — $175/person (Early Bird: $170)
    • Group of 3 — $150/person (Early Bird: $140)
    • Group of 4 — $140/person (Early Bird: $130)
    • Group of 5 — $130/person (Early Bird: $120)

    📅 Early Bird:
    Book 14+ days before the class to enjoy the discounted rate!

    Booking Cutoff:
    Final bookings close 7 days before the class to allow time for venue booking and fresh ingredient prep.

  • We understand that unexpected situations can happen.

    • Cancel 14+ days in advance: 96% refund (4% processing fee).

    • Cancel 7–13 days in advance: 50% refund.

    • Cancel within 6 days or no-show: non-refundable.

    ⏰ Arriving more than 15 minutes late may result in cancellation.

    Rescheduling:
    You may reschedule once per booking by emailing us at least 7 days in advance. The new date must be within 3 months of your original booking.

  • Children over the age of 10 may attend if they are able to sit through a short meditation and lecture quietly.
